Khana khane ke saath achar ka sewan na kewal India mein balki puri duniya mein hota hain, Isse health ko kai saare fayde hote hain, Lekin iska zyada sewan karna bhi health ke liye accha nahi hain, Kyonki yeh fayda dene ki bajaye tab nuksan dene lagta hain.

Sirf Bharat hi nahi duniya bhar mein khane ke saath aachaar ka sewan kiya jata hain. Agar India ki hi baat ki jaye toh yeh hamare bhojan ka ahem hissa hain. Hamare yaha kai tarah ke phalo aur sabziyo mein Tel aur masale mila kar achaar banaya jata hain. China, Japan, Korea mein Sabziyo ke saath Ande, Masale aur Soya Sauce mila kar Pickle banaya jata hain. Jabki Western Countries mein Sabziyo aur phalo ko Sirke mein doobo kar achaar banaya jata hain. Yani ki duniya bhar mein khane ke saath iska sewan kiya jata hain. Phalo aur Sabziyo ke saath masale aur oil wala achaar khane ke bahut fayde hote hain, Lekin isse hone wale nuksaan ko bhi nazarandaaz nahi kiya ja sakta hain.

Aachaar khane ke fayde :-

• Free Radicals se bachaye :-
Achar banane ke liye fruits aur vegetables ka istemal hota hain, Iske liye phalo aur sabziyo ko bina pakaye huye istemal kiya jata hain. Jisse phalo aur sabziyo mein mauzood nutrients khatm nahi hote hain. Yeh Anti-Oxidants se bharpoor hota hain. Yeh Anti-Oxidants achar ke jariye body mein pahuchate hain aur mukt kano yani ki Free Radicals se sharir ko bachate hain. Jo kai tarah ki bimariyo ki wajah hain Free Radicals.



• Pachan kriya sudhaare ;-
Achar khane se pachan kriya durust rahti hain. Darasal pet mein good aur bad dono tarah ke bacteria hote hain, jab aap kisi antibiotic medicine ka sewan karte hain, tab good bacteria bhi mar jate hain. Isse digestion system par effect padta hain aur khana asaani se pachta nahi hain. Jabki achaar mein namak hota hain, jo Probiotics ke vikas mein helpful hain. Isse digestion mein sudhaar aata hain.

Achar ko lambe waqt tak sahi rakhne ke liye isme jyada matra mein namak, tel aur sirke ka istemal kiya jata hain. Yeh sabhi sehat ke liye nuksandeh hote hain. Bhale hi inhe lambe waqt mein kam matra mein hi khaya jata ho. Achar sehat ke liye vahi accha hain jisme kam tel aur paani ki matra zyada ho, Lekin aise achar jyada der tak sahi nahi rahte hain aur jaldi hi kharab ho jate hain, Lekin sehat ke liye yeh behatarin hote hain. Toh kya sach mein achar khana bura hain, yeh janne ke liye achar khane ke nuksan jaroor padhe.  
Achar khane ke nuksan (Side effects of Pickle in Hindi/Urdu.) :-

1. Jyada Tel hota hain :-
Achar banate waqt jyada tel aur masalo ka istemal kiya jata hain. Tel ke jyada istemal se karne se body mein cholesterol ki matra badhti hain, iski wajah se wajan badhne ki problem ho sakti hain. Iske karan heart se related problems bhi ho sakti hain.


2. Jyada namak :- Achar faydemand hone ke sath nuksandeh bhi hain. Achar mein namak ki matra jyada hoti hain, jiski wajah se yeh health par bura asar daalta hain. Bazaar mein milane wale achaar toh aur bhi zyada nuksaandeh hote hain, Kyonki unme Sodium ke saath chemical bhi hota hain. Isme paya jane wala Sodium benzoate ko jyada khane se cancer ki samsya ho sakti hain .


3. Pachan samsya :- Bahut zyada matra mein achaar khane se, achaar ka ras pachan samsyaon ki wajah ban jata sakta hain. Pet ki preshani, pet dard aur pet phoolna bahut zyada achar khane ke side-effects hain. Yeh diarrhoea ke karan pachan tantra ki parat ko prabhavit karta hain. Ek research mein yeh baat saamne aayi hain ki achaar jyada khane wale logo ko gastric ki problem ho sakti hain.


4. Cancer ka khatra :- Achar ke jyada sewan se cancer jaisi janlewa bimari ho sakti hain. Ek research mein yeh baat samne aayi hain ki jo log achar ka zyada istemal karte hain, unhe gastric cancer ki problem jyada hoti hain. Iske alawa iske jyada sewan se gale mein kharash aur dard ki bhi shikayat rahti hain. Yeh esophageal cancer ka karan bhi ban sakta hain.


5. Ulcer :- Achar mein bahut zyada masale ki wajah se ulcer ki samsya ho sakti hain. Niyamit roop se achar ka sewan karne wale logo mein yeh problem dekhne ko milti hain. Isliye jitna ho sake kam achar khana chahiye, Ghar ka bana achar khana chahiye aur achar ko banate waqt usme dher saare masale nahi milana chahiye.


6. Diabetes :- Ji haan Diabetes ke mareezo ke liye achar khana accha nahi hota hain. Achar mein preservatives ke roop mein Chini ke saath bhi banaya jata hain. Isliye diabetes se peedit logo ke liye yeh sahi nahi hain. Chini se bane achar ka sewan bilkul nahi karna chahiye.


7. High blood pressure :- High blood pressure , jyada matra mein namak ka sewan karne ki wajah se hota hain. Isliye high blood pressure ke mareezo ko achar se doori banaye rakhni chahiye.


8. Triglyceride ka high level :- Aachar mein mauzood sabhi tarah ke preservatives ki wajah se yeh health ke liye bura hota hain. Preservatives mein aam-taur par tel ki matra jyada hoti hain. Halaki tel ki wajah se achar zyada der tak tikta hain. Lekin Iski mauzoodagi se sharir mein Triglyceride ke level mein badhotari hoti hain. Achar mein kisi bhi tarah ke tel ke istemal se yeh problem hoti hain.


9. Sharir mein Sujan :- Achar mein preservatives ke istemal ki wajah se namak ki matra zyada hoti hain. Jisse isme Sodium bahut zyada hota hain. Sodium ki wajah se sharir Paani ki matra ko banaye rakhne ka reaction karta hain jo sharir ke osmotic balance ke liye jaroori hain. Isse sharir mein sujan ki samsya hoti hain. Jyad sujan hone par doctor ki salah leni chahiye.
